Tasting Notes
The RARECAT 2021 Chardonnay is a beautiful expression of fruit from Russian River Valley - harvested off of 35 year old vines, 9 months barrel aged including a process of bâtonnage to create a beautiful creamy texture to a wine with stone fruit, d'anjou pears, lemon curd, and salted caramel. Store this Burgundian style beauty laying down between 50-57 degrees. When ready to enjoy, chill in your standard refrigerator for 30 minutes before service to chill down further. Proper glassware is a Burgundian style glass with a wide bowl to capture the aromas - in the absence of a Burgundy glass a Bordeaux style glass will do just fine. Pair this beautiful Chardonnay with lightly cooked shellfish, prawns, salmon, sea bass, chicken and vegetable terrines, creamy risotto, cheeses such as Garrotxa goat cheese and Tete de Moine raw cow's milk cheese.

Winemaker Notes
50% new French oak. Fruit was pressed to tank to settle overnight. Then it was racked to the barrels where fermentation and malolactic took place. The barrels were stirred weekly for two months to mix the lees. After 10 months in barrels the wine was racked off of the lees and blended for bottling.
