Our 2018 RARECAT Cabernet is a 100% cab blended from four vineyards -  Diamond Mountain, Coombsville, Atlas Peak, and the Hall Vineyard in St Helena. The nose is intense and powerful with blackberry, blueberry, white pepper, floral, leather and pumpkin pie spices.   The entry is smooth, velvety,  and layered complemented by the black fruit and a touch of chocolate at the finish.   Our 2018 RARECAT Cabernet Sauvignon  has lots of fruit with plush, integrated tannins that make this easy and approachable even at a young stage in its life.

Tasting Notes
The RARECAT 2018 Cabernet Sauvignon is a blend of mountain and valley floor fruit from four different nested AVA's in Napa Valley: Coombsville, St. Helena, Atlas Peak, and Diamond Mountain. Two years barrel aged, two years in bottle - this wine showcases the structure and intensity of valley floor fruit paired with the lingering acidity of coveted mountain fruit. The wine profile includes blackberry, blueberry, white pepper, floral, leather and pumpkin pie spices. Store this Napa Valley beauty between 58-69 degrees and serve at this same temperature based on preference. Proper glassware is a Bordeaux style glass. Pair this lovely Cabernet Sauvignon with: mini buffalo sliders, beef carpaccio, meatballs, braised beef short rib appetizer/dinner, medium-bodied, firm-textured cow's milk cheeses like Swiss, Gruyere and Comté.
Vineyard Notes
100% Cabernet Sauvignon blended from vineyards in Diamond Mountain (52%), Coombsville (19%), Atlas Peak (9%), and St. Helena (20%). Harvest took place between October 12 - 26, 2018.
Winemaker Notes
3 day cold soak with one pumpover a day. After inoculation, each tank received 3 pumpovers a day.  Total maceration averaged 27 days.  Each vineyards were fermented separately. 22 months of barrel aging. Overall new oak was 50%. Final blend May 2020.
