Deep purple hues, our RARECAT Old Toll Diamond mountain is richly aromatic marked by blackberry, cherry, black currant, and cassis layered with white pepper, dried lavender, cocoa,  and leather. Full-bodied and supply with hints of minerality, the fruit comes through the palate with a long finish.  Diamond Mountain is know for big tannins and aging ability and this 2018 RARECAT Old Toll Diamond Mountain is a classic representation of this wonderful AVA.  Decanting recommended.

Cabernet Sauvignon - 337 clone. Benson Vineyard sits on the western slope at 400ft elevation.
Production Notes
Hand Harvested: 10/19/2018 at 26.9 Brix. Handed sorted clusters on vibration table before de-stemming using a plank. 30 day maceration with pump-overs 3 times a day first 10 days, and 1 day after that. Racked and put in barrels in January. 80% new French oak. 4 coopers: including Seguin, Sylvain, and Giraud. 22 months in barrel.

About AVA Diamond Mountain is Napa Valley's northernmost appellation and is located immediately southwest of Calistoga. Vineyards are above the fog line at elevations of 400 to 2200 feet and experience warmer nights and cooler days than the valley floor. Whereas young northern "valley floor" wines tend to be rich and supple with low to medium acidity and soft tannins, young Diamond Mountain wines tend to be tannic with good acidity, making them particularly well-suited for aging.
