Tasting Notes
The RARECAT NV Blanc de Noirs Champagne is a high quality Champagne of 100% Pinot Noir. Store either standing up or laying down based on space and preferably in a cellar or wine refrigerator kept at a constant temperature between 44-57 degrees. When ready to imbibe either move your RARECAT Champagne to a standard refrigerator at 36+ degrees to OR place in a Champagne receptacle with ice and water to chill down. Temperature really matters when opening a bottle of Champagne. The bottle and neck must be thoroughly chilled to mitigate any spray when opening. Always keep the cage loosened (do not remove) and use a service towel on top of the cork, before twisting the bottom of the bottle releasing the pressure, thereby slowly releasing the cork - this will help to avoid any flying cork accidents! Service glassware is part of the Champagne experience - from a coup, flute, and now a standard wine glass which is becoming more popular to help promote aromatics. "Wet" the glass of choice by pouring a small sample and then returning to fill the glass. Pair this beautiful Champagne with: triple butter cream cheeses (d'affinois or explorateur), Hard cheese (manchego) the briny salt goes well, almonds, stuffed mushrooms, sausages―especially poultry and pork, ceviche, gravlax, caviar, shellfish, asian dishes of all kind
Vineyard Notes
This Pinot Noir from the CĂ´te des Bars is produced on terroir comprised of mainly chalky soils with small fragments of limestone and flint on a vineyard is slightly sloping.
Production Notes
Alcoholic fermented at 13C in tank with no malolactique fermentation. Blended in winter 2019 from two vintages: 80% - 2019 vintage plus 20% - 2018 vintage. Second fermentation in bottle started in May 2019. 3 years on yeast. Degorgement November 15, 2022 with 4g/l dosage.
